Zhoug Mediterranean marinates beef in Greek yogurt and tahini with lemon, garlic, and cilantro, then cooks it through. The yogurt and sesame set it apart from the chicken version. It eats mild, with flavor right through it. You get the whole cut, so the knife work waits until it's hot. Serve it in pita with garlic sauce, or over rice. A 2 lb bag holds eleven servings. Ships frozen.

Heating

Fully cooked. Thaw in the refrigerator, then warm only the portion you need. Bring it to 165°F internal and check the center with a thermometer. Slice or chop after heating, not before. Skillet: medium high, 5 to 7 minutes, turning. Microwave: covered, 2 to 3 minutes, turning once. Rest 1 minute. Use within 3 to 4 days of thawing.
